If you have an air fryer and a bunch of fresh coriander in the fridge, you’re about 20 minutes away from one of the tastiest chicken dinners you can make at home.

This creamy coriander chicken is one of our favourite air fryer recipes. The chicken gets a crisp, peppery exterior from the marinade, while the coconut milk sauce—vibrant and fragrant with fresh coriander—fills the kitchen with an irresistible aroma. It’s a quick, satisfying dish made with ingredients I usually have on hand, and it comes together fast for a family meal or a simple weeknight dinner.
If you often make air fryer chicken tikka or lemon garlic chicken, this is a refreshing change that still delivers big flavour with minimal effort.

Ingredients for Coriander Chicken
Chicken Thighs: Boneless chicken thighs cut into 1-inch pieces work best because they stay juicy after air frying.
Marinade: Ginger-garlic paste, crushed black pepper, white pepper, coriander powder, fresh coriander, cornflour, all-purpose flour (maida), egg, and salt form a peppery coating that crisps nicely in the air fryer.
Coconut Milk: Use thick coconut milk for a rich, creamy sauce base.
Aromatics: Garlic, green chilli (fresh and paste), and curry leaves add depth and a pleasant heat.
Fresh Coriander: Generously used in both the marinade and the sauce for that bright green flavour.
Butter and Oil: Butter enriches the sauce; a neutral oil like groundnut oil is used for sauteing and to brush the chicken before air frying.
Top Tips
- Marinate for at least 30 minutes. The cornflour and maida create a light coating that crisps in the air fryer—short marinades won’t give the same texture.
- Avoid overcrowding the basket. Leaving space between pieces lets hot air circulate so each piece browns evenly.
- Prepare the sauce while the chicken cooks. The sauce takes only a few minutes, so it will be ready when the chicken is done.
- Toss the chicken in the sauce right before serving. This preserves the contrast between the crispy coating and the creamy sauce.
Frequently Asked Questions
You can, but thighs are preferable because they retain more moisture when cooked at high heat. If you use breast, reduce the air-frying time and watch closely to avoid drying.
Yes—shallow fry the marinated pieces in a pan with a couple of tablespoons of oil until golden and cooked through, about 3–4 minutes per side. The air fryer gives crispiness with less oil, but pan-frying works well for flavour.
Bell peppers, broccoli, and mushrooms are good choices. Stir-fry them separately so they stay crisp, then add them to the sauce with the chicken.
Yes. Prawns cook much faster—air fry for 4–5 minutes. For paneer, cube it, coat in the same marinade, and air fry until golden. The coconut-coriander sauce pairs nicely with any of these.
Storage Tips
- Refrigerate separately: Store chicken and sauce in airtight containers for up to 2 days to keep the coating from softening.
- Freezing not recommended: Coconut milk sauces can split after freezing and thawing, and the crispy coating won’t hold up well.
- Reheating: Gently warm the sauce on the stove and crisp the chicken in the air fryer at 180°C for 2–3 minutes before combining and serving.
Serving Ideas
This creamy coriander chicken is versatile—serve it as a starter or make it the centerpiece of a main course. Here are a few favourite pairings:
- Jeera rice: The coconut-coriander sauce over scented rice makes a comforting, simple meal.
- Lachha paratha: Hot, flaky parathas and creamy peppery chicken are a classic combination.
- Coconut appam: Soft, lacy appams soak up the sauce and lend a South Indian twist.
- Butter garlic naan: For an indulgent option, pair the chicken with warm garlic naan.
- On its own: Serve as a starter or snack—crispy, saucy pieces are excellent with a cold drink.

Air Fryer Creamy Coriander Chicken
Ingredients
For marination
- 250 g boneless chicken thighs, cut into 1-inch pieces
- ¼ teaspoon salt
- 2 teaspoons ginger-garlic paste
- 2 teaspoons crushed black pepper
- 1 teaspoon crushed white pepper
- 2 teaspoons coriander powder
- 3 tablespoons finely chopped coriander leaves
- 2½ tablespoons cornflour
- 1 tablespoon all-purpose flour (maida)
- ½ egg, whisked
For the sauce
- 1 teaspoon groundnut or neutral cooking oil
- 1 tablespoon butter
- 1 tablespoon finely chopped garlic
- 1 green chilli, finely chopped
- 1 sprig curry leaves
- 2 teaspoons green chilli paste
- 3 tablespoons finely chopped coriander leaves, divided
- ½ cup thick coconut milk
- ¼ cup water
- ¼ teaspoon salt
- ¼ teaspoon crushed black pepper
Instructions
Marinating the chicken
- Combine the chicken with all marination ingredients in a bowl. Toss until each piece is well coated. Set aside to marinate for 30 minutes.
Air frying the chicken
- Preheat the air fryer to 200°C. Lightly brush the basket with oil. Arrange marinated pieces in a single layer with space between them. Brush or spray with a little oil and air fry at 200°C for about 7 minutes, until cooked through and slightly browned at the edges.
Preparing the sauce
- Heat oil in a pan or kadai over medium heat. Add butter; once melted, add garlic, green chillies and curry leaves. Sauté for about a minute until the garlic is golden.
- Add the green chilli paste and cook for 30 seconds to remove rawness. Stir in 2 tablespoons of chopped coriander and cook until just wilted.
- Pour in the coconut milk and water, season with salt and crushed black pepper, bring to a boil, then simmer for 1–2 minutes.
Bringing it together
- Add the air-fried chicken to the sauce, toss to coat well, and sauté for about a minute so the sauce sticks to the pieces. Remove from heat, garnish with the remaining tablespoon of coriander leaves, and serve immediately.
