Indulge in the heart of autumn with our Creamy Pumpkin Sausage Mac and Cheese with Kale. This dish is the epitome of comfort food, offering a rich, savory, and wonderfully easy dinner solution for those evenings you crave a soul-satisfying bowl of homemade pasta.

This particular recipe holds a special place, having evolved through numerous iterations before finally reaching perfection. It’s no exaggeration to say that this ultimate creamy pumpkin sausage mac and cheese recipe has been a labor of love, residing in my culinary thoughts and digital drafts for several months. The journey to sharing it has been primarily due to the notoriously challenging task of capturing its rich, inviting essence through photography. As a dedicated food blogger, presenting anything less than visually stunning images alongside a stellar recipe is simply not an option.
Over the past few months, this dish has been prepared and re-prepared more times than I can count, each session bringing subtle tweaks and enhancements. My passion for cooking means I rarely leave a good recipe untouched; there’s always a new dimension to explore, a flavor profile to deepen, or a texture to perfect. This continuous refinement has transformed what was already a delicious concept into something truly extraordinary. For instance, an earlier version, even one captured in a video produced a couple of months ago, featured just the delightful combination of pumpkin and sausage mac and cheese. But how could a recipe grace these pages without the wholesome touch of fresh greens? Thus, the vibrant, nutritious kale was introduced, adding both color and a welcome earthy bitterness to balance the richness.

While the video might depict a version pre-kale, I invite you to simply envision the final flourish of tender, wilted kale being stirred into the pot – a crucial addition that truly elevates this dish from excellent to exceptional.

Much like many of my cherished pasta creations, this creamy pumpkin sausage mac and cheese recipe began quite by accident, born out of a necessity to tackle a rather overflowing refrigerator. I confess to a delightful, albeit sometimes overwhelming, habit: I love to hoard ingredients. This becomes particularly evident when those adorable little pumpkins make their seasonal appearance on grocery store shelves. One simply isn’t enough; I inevitably find myself bringing home five, maybe more! Then comes the delightful challenge of deciding what to do with them all. My go-to solution is to transform them into homemade pumpkin puree, by the jarful, filling my fridge to the brim. It’s precisely this delightful “problem” that often sparks the most inventive and beloved recipes, leading directly to this incredible dish. And for once, I’m immensely grateful for a fridge brimming with homemade pumpkin puree jars.
Because let me tell you, this creamy pumpkin sausage mac and cheese is truly THE BEST! It’s the quintessential dish for those transitional moments when winter’s chill still lingers, and you’re yearning for one last cozy embrace of comfort food. Imagine yourself nestled in your favorite jammies, a generous bowl of this creamy pasta in hand, savoring the last vestiges of chilly air. It’s the perfect excuse to don your favorite oversized grey sweater, indulge in all the glorious carbs you desire, and perhaps even pair it with a steaming mug of soup and some crusty bread for dipping. This dish isn’t just a meal; it’s an experience, a warm hug in a bowl that makes every spoonful feel like a cherished moment.

Before we dive deeper into our love affair with this exceptional mac and cheese, I must share a crucial tip: for the absolute best flavor and texture, there’s truly no substitute for making your own pumpkin puree. While canned options exist, the fresh, vibrant taste of homemade puree elevates this dish to an entirely different level, making every effort worthwhile.
How to make Homemade Pumpkin Puree?
Believe me when I say that making pumpkin puree at home is one of the simplest and most rewarding culinary tasks you can undertake. While various methods exist, and here’s a really comprehensive resource for different techniques, my preferred approach is straightforward: boil and puree. Begin by peeling and cutting your pumpkin into manageable 1-inch pieces. Submerge these pieces in boiling water and cook for approximately 20-25 minutes, or until the pumpkin is fork-tender. Once cooked, drain thoroughly and allow the pieces to cool slightly before pureeing them in a food processor or blender until silky smooth. This method yields a wonderfully fresh and naturally sweet puree that is far superior to its canned counterparts. You can easily make a large batch and store it by freezing or canning for future use, ensuring you always have this golden goodness on hand.
However, if time is truly a constraint or fresh pumpkins are unavailable, an organic canned pumpkin puree can serve as a convenient alternative. Just be sure to choose one that is 100% pumpkin, with no added sugars or spices, to maintain the integrity of the dish’s flavor profile.
Friends, when that undeniable craving for a warm, comforting bowl of food strikes, regardless of whether it’s the peak of summer or the depth of winter, this pumpkin sausage mac and cheese is an absolute winner! It’s not only incredibly satisfying but also remarkably quick, coming together in approximately 30 minutes from start to finish. This dish is so irresistibly delicious that you’ll undoubtedly find yourself wishing you had doubled the recipe to ensure there are plenty of leftovers to enjoy. Its rich, savory notes and creamy texture make it a dish you’ll want to revisit again and again, establishing itself as a beloved staple in your culinary repertoire.

Ingredients
- 2 cups Elbow Pasta, or Macaroni Pasta
- 3-4 Spicy Italian Sausage links, casing removed (or ground Bangalore Pork sausages)
- 1 teaspoon Garlic, minced
- 1/4 cup Onions, finely diced
- 1 1/2 cups Pumpkin Puree, homemade is recommended
- 1/2 teaspoon Chilli Flakes
- 1/2 cup Milk
- 1/2 cup Cream Cheese
- 1 cup Kale, roughly chopped
- A few sage leaves
- Salt to taste
Instructions
-
Bring a large pot of salted water to a boil. Add the elbow or macaroni pasta and cook according to package instructions until al dente. Drain the pasta and set it aside, reserving about ½ cup of the pasta water.
-
In a large, deep pan or Dutch oven, add the sausage meat (removed from casings). Cook over medium-high heat, breaking it up with a spoon, until thoroughly browned and cooked through. Once cooked, remove the sausage meat to a plate and set aside, leaving any rendered fat in the pan.
-
Using the same pan with the sausage fat, add the minced garlic and finely diced onions. Sauté for 2-3 minutes until the onions become translucent and fragrant. Stir in the pumpkin puree, milk, chili flakes, and a pinch of salt. Bring the mixture to a gentle simmer, stirring constantly.
-
Add the cream cheese to the simmering pumpkin mixture and stir until it completely melts and is smoothly combined. Return the cooked sausage and drained pasta to the pan. Toss everything together to ensure the pasta and sausage are thoroughly coated in the creamy pumpkin sauce. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency. Finally, add the roughly chopped kale and cook until it wilts, about 2-3 minutes. Stir in the fresh sage leaves just before removing the pan from the heat. Taste and adjust salt if necessary.
Notes
- Elbow pasta and macaroni pasta refer to the same type of small, curved tubular pasta.
- Feel free to use any type of ground sausage meat (pork, chicken, or turkey) for this recipe, adjusting the spice level to your preference.
- For an even richer flavor, you can add a sprinkle of Parmesan cheese or a blend of your favorite hard cheeses just before serving.
- Consider adding a splash of white wine to the onion and garlic mixture for an extra layer of complexity.
- This dish pairs wonderfully with a crisp green salad or some warm, crusty bread to soak up every last drop of the delicious sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk or broth if the sauce has thickened.
