Our home in Margherita was the enchanting Singpho Eco Lodge, a place that perfectly encapsulated the region’s harmonious blend of nature and tradition. Here, amidst the serene beauty of tea growing all around, we had the privilege of spending time with the indigenous Singpho tribe. The Singphos hold a significant place in Assam’s tea history; they are considered among the earliest cultivators of tea in India, long before commercial plantations took root. Their traditional methods of processing and consuming ‘Phap,’ a smoked tea, offered a fascinating insight into the ancient origins of this beloved beverage. Living sustainably, in close communion with the forest, the Singpho community demonstrated a profound respect for their environment, foraging for herbs and ingredients that define their unique culinary identity. This immersive experience at the eco-lodge truly highlighted the deep cultural roots of tea in Assam, far beyond its commercial production.

It was here that I encountered the infamous Bhut Jhalokia, or Ghost Chili, known as one of the world’s hottest peppers, a staple in many Assamese kitchens, adding a fiery kick to dishes for the adventurous palate. Our journey then took us deep into the heart of Assam’s commercial tea production, where we explored three distinguished tea estates: Chota Tingrai, Halmari, and Zaloni. Visiting these estates offered a comprehensive understanding of the meticulous effort involved in cultivating and processing tea. Each estate felt like a self-contained township, sprawling across hundreds of acres, meticulously organized with lush tea plantations. Beyond the fields, these estates provide entire communities with essential infrastructure, including schools, hospitals, and grocery stores, all centered around the manager’s stunning bungalow, a relic of colonial charm. The scale and efficiency were awe-inspiring.

We observed the diligent work of tea pluckers, predominantly women in their traditional attire, gracefully navigating the rows of tea bushes, expertly selecting only the “two leaves and a bud.” Inside the factories, we witnessed the transformation of fresh tea leaves into the familiar granules, a process involving withering, rolling, fermenting, and drying. At Halmari Estate, renowned globally for consistently producing some of the most expensive CTC (Crush, Tear, Curl) tea, we participated in a formal tea tasting. This sensory experience, guided by experts, allowed us to appreciate the subtle nuances in aroma, liquor, and taste, deepening our respect for the craft. Understanding the journey from plant to cup, from the soil to the skilled hands and sophisticated machinery, truly emphasized the immense value and heritage embedded in every single tea leaf.
