  3. Line a loaf tin with parchment paper, allowing an overhang on the longer sides to easily pull out the chicken later.
  4. Layer the marinated chicken thighs one on top of the other so that all the chicken is tightly packed in the tin.
  5. Broil (using only the top heating element) for 25 minutes until the top is nicely charred and the chicken is cooked through, registering an internal temperature of 74 C / 165 F.

Grilling Instructions

  1. Prepare the grill by preheating it to medium-high heat and brush the grates with oil to prevent sticking.
  2. Place the marinated chicken thighs on the grill and cook for 2-3 minutes per side until golden brown. If charring too quickly, adjust the heat downwards.
  3. Generously baste the chicken with any leftover marinade from the bowl, flip, and cook for 1 minute.
