Ingredients 

  • 100 grams Makhana, Fox Nuts / Popped Lotus Seeds
  • 100 grams Almonds
  • 100 grams Cashews
  • 2 teaspoons Ghee (or coconut/olive/mustard oil for vegan option)

Instructions 

  • 1. Preheat Air Fryer: Begin by preheating your air fryer to 180°C (350°F) for 3 minutes. This ensures even and quick roasting.
  • 2. Roast Makhana: Once preheated, add the makhana (fox nuts) to the air fryer basket. Air fry at 180°C (350°F) for 6 minutes. It’s perfectly normal to hear popping sounds as they toast.
  • 3. Roast Nuts: Carefully remove the air-fried makhana from the basket and set aside. Now, add the almonds and cashews to the air fryer. Air fry at 180°C (350°F) for another 6 minutes. Around the 3-minute mark, pause and shake the nuts vigorously to ensure even browning and prevent burning.
  • 4. Prepare Seasoning Base: In a Kadhai (or a deep pan) on the stovetop, heat the ghee over medium-low heat. Add the mustard seeds and allow them to splutter and pop, indicating they are cooked. Reduce the flame to low, then add the fresh curry leaves, chaat masala, turmeric powder, and salt. Sauté gently for about 10 seconds, allowing the spices to become fragrant without burning.
  • 5. Combine & Season: Immediately add the roasted makhana and nuts into the Kadhai with the warm spice mixture. Toss everything together thoroughly, ensuring all the makhana and nuts are evenly coated with the delicious seasoning. Turn off the flame.
  • 6. Cool & Store: Spread the seasoned makhana and nuts on a large tray or plate to cool completely to room temperature. Once cooled, transfer them to a clean, airtight jar or container. They are now ready for easy, healthy snacking!

  • It is important to pay attention to the cook time as nuts can burn very easily. Each air fryer is different, and the exact time of roasting may differ slightly depending on the one you have. I would recommend checking every minute or so after first roasting the nuts and makhana for 3 minutes. Always taste test for crispness.
  • If roasting on the stovetop, never do it on high heat as that can burn the makhana and cook things unevenly. Makhana roasts best on low heat for those perfect crunchy and crispy results, stirring frequently.
  • If you’re making a bigger batch, I would recommend roasting it in batches. Overcrowding the air fryer basket or pan can lead to uneven cooking and can make the makhana chewy instead of crunchy.
