Ingredients you’ll need to make Strawberry Mousse

This recipe is divided into two easy steps – strawberry compote and the mousse. A compote is nothing but a cooked mixture of whole fruit and sugar to result in a jam-like texture.

Picture of all the ingredients required for strawberry mousse with text to identify them
  1. Strawberries – Thoroughly washed and cut into small chunks. I have used fresh strawberries for this recipe, and recommend you to do the same. However, you can replace it with frozen strawberries if that’s what’s available to you.
  2. Sugar – I have used regular white sugar. I don’t recommend swapping it with anything else as white granulated sugar blends beautifully with strawberries to make a thick compote.
  3. Water – Just a little bit to help the sugar melt easily
  4. Lemon zest – Gives the compote a nice zing. Although it’s optional, I highly recommend adding it
  5. Non-Dairy Whipping cream – I use a store-bought non-dairy whipping cream. But you can use anything that’s easily available to you.

5. Whip cream until it reaches soft peak consistency.

6. Add 4-5 tablespoons of strawberry compote and fold to combine. The amount of strawberry compote can be adjusted to your liking. Keep swirls and streaks of compote in the whipped cream by not fully mixing the cream and compote.

7. Transfer this mixture into a piping bag with a star tip.

8. Add a spoonful of compote into a small glass jar or tea glass. Pipe the mousse over it till the top. Cut a strawberry into half and place it on the side. Transfer to the fridge for 2-3 hours. Serve chilled!

Top Tips To Make The Best Strawberry Mousse

  • Gently fold the compote into the whipped cream and make sure to not mix it too thoroughly. Keeping a few swirls and streaks of the compote not only looks pretty but also adds an additional layer of flavour to the mousse.
  • You can adjust the amount of compote you add to the whipped cream based on your personal preference.
  • Refrigerate this mousse for a minimum of 2 to 3 hours before serving. This allows it to be completely set.
  • If you don’t have access to good quality heavy cream (which we don’t always do in India), use non dairy whipping cream (such as Tropolite, Rich’s, D’lecta) which will give you better results
  • Good heavy whipping cream brands in India to look for are Amul Whipping Cream, Elle & Vire, Arla and D’lecta. Stay away from Milky Mist Heavy Cream – awful flavour!
