  2. Grind the Masala: Once cooled, transfer the roasted spices and aromatics into the masala jar or chutney grinder of your blender. Grind them to a coarse powder. The goal is a well-blended mix, but not a fine paste – a coarse texture provides a delightful bite to the stuffing.
  3. Adjust Consistency and Prepare for Stuffing: Remove about two tablespoons of this freshly ground spice mix and set it aside; this will be used later. To the remaining spice mix in the blender jar, add 1 tablespoon of water. Briefly blend again until the mixture is coarse but slightly wet and holds its shape. It should not be a completely dry powder, as a dry mix will easily fall out of the brinjals. If needed, add another tablespoon of water, one at a time, until you achieve the desired moist, crumbly consistency.

  1. Prepare the Brinjals: Wash the baby brinjals thoroughly and pat them dry with a clean cloth. Just before you’re ready to stuff them, carefully make a deep ‘X’ incision on the bottom of each brinjal. Ingredients

  • 1 Tablespoon Jaggery Powder
  • 1 1/2 Teaspoon Salt
  • 1-2 Tablespoons Water

Tempering

  • 2 Tablespoons Oil
  • 1 Teaspoon Mustard Seeds
  • 10 Curry Leaves
  • 1/4 Teaspoon Turmeric Powder

Instructions

Phase 1: Preparing the Flavorful Masala Stuffing

  • 1. Prepare the Brinjals: Wash the baby brinjals and pat them dry. Just before stuffing, make a deep ‘X’ incision on the bottom of each brinjal, deep enough to slightly open it but not split it completely.

  • 4. Adjust Masala Consistency: Remove two spoons of the spice mix and set aside. Add 1 tablespoon of water to the blender jar with the remaining mix and blend briefly. The mix should be coarse yet slightly wet to stick inside the brinjal. Add more water sparingly if needed.

  • 5. Stuff the Brinjals: Gently open each brinjal and generously stuff with the moist spice mix. Set aside for 10 minutes to allow flavors to meld.
  • 6. Prepare the Tempering: Add 2 tablespoons of oil to the same pan and heat. Once hot, add mustard seeds and let them splutter. Reduce flame to low, add curry leaves and turmeric powder. Sauté for 5 seconds, then turn off the heat.
  • 7. Combine with Tempering: Pour the prepared tempering over the stuffed brinjals and mix well, ensuring an even coating.

Phase 3: Air Frying to Perfection

  • 8. Initial Air Fry: Transfer brinjals to an air fryer-proof pan (arrange in a single layer). Cover tightly with aluminum foil to steam them. Cook at 180°C (350°F) for 30 minutes.
  • 9. Final Air Fry: Remove foil. Sprinkle the reserved dry spice mix over the brinjals and gently mix. Add 2 tablespoons of water and mix again. Return to air fryer and cook for another 10-15 minutes at 180°C (350°F), or until brinjals are tender and slightly charred.
  • 10. Serve: Serve hot with rice and ghee or curd rice, or your preferred accompaniment.
