This guide covers everything: from crafting the distinct garlic bread seasoning from scratch to mastering the dough for ultimate softness and achieving that unmistakable crispy crust. We even show you how to prepare them in two delightful ways: classic plain or decadently stuffed. Whether you prefer the simple, garlicky goodness or a cheesy, savory filling, these homemade breadsticks are poised to become your go-to appetizer for any occasion.
Crafting the Signature Garlic Bread Seasoning Mix
What truly sets Domino’s garlic bread apart is its unique seasoning blend. This isn’t just any garlic powder mix; it’s a carefully balanced combination of aromatic herbs and spices that elevates the entire experience. This seasoning is the secret ingredient, the “everything” that transforms simple bread into something extraordinary. The best part? It’s incredibly easy to make from scratch and can be stored for future use, perfect for enhancing other dishes like bread toasts, pizzas, or sandwiches.
For our homemade version, we use a blend of high-quality ingredients: fragrant garlic granules, dried oregano, earthy dried rosemary, sweet dried basil, a touch of heat from chili flakes, freshly ground black pepper, and fine salt. These are readily available at most supermarkets. While garlic powder can be substituted, we highly recommend using garlic granules for their superior texture and more intense garlic flavor. This custom seasoning mix is the unsung hero of this recipe, delivering a powerful punch of garlic, vibrant herbal notes, and a subtle warmth that will have everyone asking for your secret!
Mastering the Dough: The Heart of Your Domino’s Style Garlic Bread
The foundation of exceptional garlic breadsticks lies in a well-prepared dough. Our recipe utilizes common pantry staples: all-purpose flour, a hint of sugar to activate the yeast, active dry yeast itself, and a generous infusion of our special homemade garlic seasoning mix. To achieve that characteristic soft, tender crumb, we opt for milk as the liquid component, as it yields a far softer dough compared to water-based recipes. Getting the dough right is crucial, so let’s walk through the key aspects:
- Proper Kneading Technique: Kneading develops the gluten in the flour, which is essential for the bread’s structure and chewiness. You can knead the dough either by hand or using a stand mixer equipped with a dough hook. If kneading by hand, aim for about 8-10 minutes until the dough becomes smooth and elastic. With a stand mixer, 6-7 minutes should suffice. A good way to test for sufficient gluten development is the windowpane test: take a small piece of dough and gently stretch it. If you can stretch it thin enough to see light through it without tearing, your gluten is well-developed. Alternatively, a simple indentation test where the dough springs back indicates readiness.
- Optimal Dough Texture and Consistency: Once kneading is complete, the dough should be soft, supple, and perhaps slightly tacky to the touch, but it should no longer stick aggressively to your hands or the work surface. This ideal consistency ensures a light and airy final product.
- Infusing with Grated Garlic: Beyond the seasoning mix, incorporating freshly grated or finely minced garlic directly into the dough is a game-changer. This step amplifies those pungent, irresistible garlicky flavors, ensuring every bite is bursting with aromatic goodness. It’s a layer of flavor that truly elevates the breadsticks.
- The Magic of Melted Butter: Adding melted butter to the dough is a smart technique. Not only does it incorporate fat evenly, but it also helps to create a rich, tender texture. Melted butter significantly contributes to the dough’s softness and elasticity, leading to breadsticks that are tender on the inside and rich with flavor.

Garlic Breadsticks Done Two Ways: Plain and Stuffed
We believe in variety, especially when it comes to delicious homemade bread! This recipe offers the flexibility to prepare your garlic breadsticks in two equally delightful ways, catering to different cravings and occasions:
- Classic Plain Garlic Breadsticks: If your heart yearns for the original, unadulterated garlic breadstick experience, the plain version is wonderfully simple and incredibly satisfying. The focus here is entirely on the perfect balance of chewy texture, crispy crust, and an abundance of rich, garlicky flavor. These are fantastic on their own or dipped into your favorite marinara or cheese sauce.
- Decadent Stuffed Garlic Breadsticks: Ready to take your breadsticks to the next level? Stuffing them with your favorite fillings transforms them into a hearty and incredibly flavorful treat. In our recipe, we create a delectable cheesy garlic bread filling with sweet corn. We also recommend a generous smear of cream cheese to ensure a burst of creamy, savory goodness with every bite. Don’t be afraid to get creative here! Think about adding finely diced bell peppers, jalapeños for a kick, sautéed mushrooms, or even crumbled paneer or cooked chicken for a more substantial snack. The possibilities for customization are endless, allowing you to tailor them exactly to your taste preferences.

The Trademark Domino’s Style Garlic Bread Shape and Crust
Achieving that signature fluffy, crispy, and slightly curved semi-circle shape of Domino’s garlic bread is surprisingly straightforward. The key lies in a simple yet effective folding technique:
For stuffed garlic breadsticks, roll out your dough into a circular shape. Place your chosen filling (like our cheesy corn mixture) onto one half of the rolled-out dough, leaving a small border around the edges. Then, simply fold the other half of the dough over the filling, creating a semi-circle. Firmly pinch and seal the edges all the way around to ensure the delicious stuffing stays securely inside during baking.
This folding method is not just about containing the filling; it also contributes significantly to the breadstick’s texture. When baked this way, the outer layer becomes beautifully crispy and golden brown, while the inner layers remain wonderfully moist and soft, providing a delightful contrast.
For plain garlic breadsticks, the process is even simpler. Roll out one half of the dough into a semi-circle and gently stretch it with your hands until you achieve the desired shape and thickness. The objective is to create a pleasing, elongated semi-circle that will puff up nicely in the oven.
Pro Tips for Making Perfect Domino’s Style Garlic Breadsticks
To truly nail that authentic Domino’s garlic bread experience, these expert tips will guide you to perfection:
- The Secret to the Crunch: Maize Flour: This is a crucial step that many home recipes overlook! Before baking your breadsticks, generously sprinkle a light dusting of maize flour (cornmeal) over the top of the shaped dough. Maize flour is the magic ingredient responsible for that distinct, subtle crunch on the crust that is so characteristic of Domino’s. Remember, a little goes a long way, but don’t skip it!
- Season Your Baking Tray: Don’t just grease your baking tray – season it! Before placing your shaped dough, sprinkle a combination of your homemade garlic seasoning mix and a little maize flour directly onto the parchment-lined baking tray. This ingenious trick ensures that the bottom of your garlic breadsticks also gets a flavorful, seasoned crust, adding an extra layer of deliciousness to every bite.
- Ensuring a Tight Seal for Stuffed Bread: When preparing stuffed garlic breadsticks, it’s paramount to seal the edges of the dough properly and securely. Take your time to pinch the edges together firmly. If the seal isn’t tight, the cheese or other fillings could ooze out during baking, leading to a mess and a less satisfying product. We want all that savory goodness to remain perfectly encased within the soft bread!
- Proofing in a Warm Environment: Dough rising is vital for light and airy breadsticks. Ensure your dough proofs in a consistently warm, draft-free place. An oven with the light on, or a warm spot on your counter, can work wonders. Consistency in temperature ensures an even rise.
- Preheat Your Oven Thoroughly: Always preheat your oven to the specified temperature (180°C or 350°F) for at least 15-20 minutes before baking. A properly preheated oven provides an initial burst of heat that helps the dough rise quickly and creates that desired crispy crust.

6 people
Ingredients
Oregano Seasoning
- 2 tablespoons Garlic Granules
- 1 tablespoon ground Black Pepper
- ½ tablespoon dried Oregano
- ½ tablespoon dried Basil
- ¼ teaspoon dried Rosemary
- ½ teaspoon Red Chilli Flakes
- ¾ tablespoon Salt
Corn and Cheese Filling
- ¼ cup Cream Cheese, or cheese spread
- 1/3 cup Mozzarella cheese, grated
- 2 tablespoons Sweet Corn Kernels
Bread Dough
- 2 cups All Purpose Flour (Maida)
- ¾ cup lukewarm Milk
- 2 tablespoons Sugar
- 1½ teaspoons Active Dry Yeast
- 1 tablespoon finely minced Garlic
- 2 tablespoons Butter, melted + 2 tablespoons extra for brushing
- ¼ teaspoon Salt
- 1 tablespoon Oil
Instructions
Oregano Seasoning
- Add all the ingredients into a mixing bowl. Mix and ensure it is well combined. Keep aside for later use.
Bread Dough
- In a large bowl (for a stand mixer or hand kneading), combine together flour, 2 tablespoons of the oregano seasoning, sugar, and yeast. Add all the milk and begin to knead the dough using the dough hook attachment or by hand.
- Knead the dough for 6-7 minutes if using a stand mixer, or for 8-10 minutes if kneading by hand. Ensure the dough is soft and supple. When almost done, add minced garlic, melted butter, and salt, then knead for 1-2 minutes or until well combined. Add a little flour if necessary while kneading. The dough will feel sticky initially but will become less so as you knead.
- Once kneading is complete, shape the dough into a large ball. Grease a clean bowl with oil. Place the dough in the bowl and turn it around to lightly coat it with oil. Cover the bowl with a damp cloth or plastic wrap and place it in a warm place to proof. This process can take anywhere between 1-2 hours, depending on ambient temperature and humidity. The dough should double in size.
- Remove the proofed dough from the mixing bowl and gently punch it down to release air. Divide it into two equal halves.
- For Plain Garlic Breadsticks: To make the plain version, roll one half of the dough out to form a semi-circle, as demonstrated in the video. Set it aside.
- For Stuffed Garlic Breadsticks: Roll out the other half of the dough into a circle. On the bottom half of the circle, spread out the cream cheese, add grated mozzarella, sweet corn kernels, and sprinkle some oregano seasoning. Leave about a ¼-inch border around the edges, as shown in the video. Pull the top half of the dough over the cheese and securely seal the edges by tightly pinching them with your fingers. Ensure a tight seal to prevent any cheese from oozing out during baking.
- Preheat your oven to 180°C (350°F).
- Grease and line a baking tray with parchment paper. Sprinkle maize flour and some oregano seasoning onto the parchment paper. Carefully place the shaped dough on the tray over the seasoned paper. Sprinkle some more maize flour and oregano seasoning on top of the dough. Brush the top with cooled melted butter and add more seasoning or maize flour if desired. Using a sharp knife, lightly score straight lines along the bread for easy cutting after baking. Do not cut all the way through before baking. Cover the tray and allow the bread to proof on the bench for an additional 20 minutes.
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and cooked through. Once baked, brush immediately with additional melted butter for extra richness and shine. Serve warm.
Notes
- You can also proof the dough in an Instant Pot for a faster rise:
- Prepare the Instant Pot for proofing: Brush the base and sides of the inner pot with a little oil. Place the dough directly into the inner pot. Cover the Instant Pot with a glass lid or aluminum foil (do not use the Instant Pot pressure lid).
- Turn on the Instant Pot and select the YOGURT function on LOW. Set the timer to 30 minutes. Once the timer beeps, check if the dough has doubled in size and proved sufficiently. Press CANCEL and turn off the Instant Pot. Once proofed, proceed with the baking instructions as above.
- The time it takes for your dough to rise will naturally vary based on environmental conditions, including:
- Temperature: An ideal temperature range is typically 80°F (27°C) to 90°F (32°C).
- Humidity: A humidity level between 60% to 80% is generally favorable for dough rising.
- The baking time provided is a guideline; actual time may vary depending on your specific oven. Bake at 180°C (350°F) for 20-25 minutes or until the breadsticks are beautifully golden brown and cooked through.
- Do not skip the maize flour (cornmeal) when sprinkling on the baking tray and over the dough. This is the key ingredient for achieving that desirable crunchy exterior, a hallmark of authentic Domino’s style breadsticks.
- While our homemade seasoning is recommended for best results, you can use store-bought oregano seasoning if preferred. Adjust quantities to taste.
